And while Bonfire Night will be lighting up the skies on Thursday 5 November, Professional Cookery students will be lighting up plates with their first international menu, serving up Greek cuisine.

Dishes on the menu will include Kalamarakia Tiganita, Chicken Souvlaki and Orange Semolina Cake.

The country on the menu will change each week, with diners also having the opportunity to enjoy dishes from France, Mexico, Spain and the USA.

Shirley Duffy, Lecturer in Hospitality at UHI North, West and Hebrides, said the menus would give students the chance to work with different styles of cooking and ingredients.

She explained: “It’s a great opportunity for our students to experience different types of cuisine and to develop their skills in a real restaurant setting.

“They’ll be involved in preparing and serving the food, while also learning about the different techniques and traditions associated with each style of cooking.

“It also gives people in the local community the chance to come into Flagstones and see the standard of food our students can produce.”

The international menus will form part of Flagstones’ lunch service, with sittings from 12.15pm and 12.30pm on selected dates.

The restaurant will also host a range of other events during November and December, including breakfast, quick lunches, brunch, traditional Christmas lunches and afternoon tea.

Members of the public can book tables through the main college reception in Thurso.

Graduates from UHI North, West and Hebrides’ Professional Cookery courses have gone on to work in some of the UK’s best-known kitchens, including The Ritz, Skibo Castle and the Gleneagles Hotel.

Students can also study Professional Cookery at the college’s Dornoch, Fort William and Stornoway campuses.
